Finding random food in your fridge to make a tasty meal… say like Naan pizza?!?
Naan is an incredible thing all on its own, but add some marinara sauce, melted cheese and grilled veggies…. psshha, we’re talking about a whole other ball game now.
Josh (the hubs bubs) was so kind enough to be the grill master… as he so often is.
This recipe is so easy it while shock you.
1. Cut up your grillin’ veggies of choice: I used eggplant and tomatoes.
2. Grill the veggies.
3. While the veggies are grilling, spread about 1/4 cup of marinara sauce on each piece of naan and sprinkle 1/4 cup of cheese over that.
4. After the veggies are thoroughly cooked, split them evenly amongst the pieces of naan.
5. Place the prepared naan onto the grill and cover with the lid. You just want it on long enough to melt the cheese, about 3 minutes.
See, I told you it was easy peasy!
Note: the bottom of our naan got pretty blackened (which tasted really good actually), but if you want to remedy this I would brush on some olive oil on the bottom of your pizza naan before assembling and placing on the grill.
