Frozen Banana Bites

Here I am again… In an airport, and I’m feeling pretty bittersweet. I’m happy to be going home to my sweet man of a husband (I think he’s pretty special) and to my great friends, but there is something about leaving family that just feels wrong.

Such is life I guess.

So let’s not talk about these things. Let’s talk about sweets! Dessert is always a good thing… except when it’s bad… bad sweets should be outlawed!

But you know what’s even better than desserts? Desserts that don’t make you curse out “PAULA DEAN!!!” after you eat them.

These sweet treats are just enough chocolate peanut buttery goodness so you feel special and deserving of such an indulgence without feeling like you should immediately start your workout routine after placing your fork down.

Always an added bonus is that these puppies are so easy if you blink, they might appear before your very eyes!

So feel special and happy today! Not bittersweet like me…

FROZEN BANANA BITES
Ingredients:
1/3 cup chocolate chips (semi or bittersweet)
1/4 cup peanut butter
3 bananas, cut into 1 inch bites and frozen through
Sprinkles

Melt the chocolate and peanut butter in a double broiler or in the microwave (in 20 second intervals and stirred) until thoroughly combined.
Line a baking sheet with parchment paper.
Working quickly using a fork, dip the frozen banana pieces into the chocolate mixture making sure to tap off excess. Carefully move the bites to the baking sheet. Immediately top with sprinkles. Repeat until all bites are covered.
